Farmed Osetra caviar, also known as Ossetra or Oscietre, is celebrated for its distinctive nutty, rich flavor and firm texture, making it a premium choice in the caviar market. This large, mature egg bead caviar is among our favorites for its exceptional quality.

Historical Significance: True Osetra caviar comes from Acipenser gueldenstaedtii which is its scientific name otherwise called the Russian sturgeon, it was originally found in the Caspian Sea, Black Sea, and Azov River basins, that however is not the case in current day.. Consumed since ancient times but it is now farmed globally.

There are 28 types of Sturgeon, non all are consumed, we see about 35% of them in market. We proudly represent mostly small farm productions who harvest in a more bespoke manner. We feature osetra, Siberian Baerri and hybrid of both and at times beluga hybrid.We also carry roe.
