It seems an odd request when we in the caviar industry are asking our clients to hold out their hands in such a manner but there is a good reason for this, provided your hands are clean and free of lotion.
At Haute Caviar, our reasoning is mainly that you can taste all of the fresh flavors as it's completely unadulterated. When our founder set out on her path in caviar and wine, she trained her olfactory sense with over 10,000 hours of tasting (each - wine and caviar).
To taste caviar side by side allows your tongue to activate all of its taste buds.
Did you know that we humans have between 2,000 and 10,000 taste buds?
In wine, we taste for sweetness, tannin, acidity, body (light-medium-full) and look at the color of the wine, along with many other aspects.
In caviar, we do the same, we are looking also for texture in the mouth or mouthfeel, acidity would be an off note, we like balanced flavors, minerality, nuttiness, fattiness, creaminess.. and those positive notes.
It is subjective but it also is related to the farms practices how pleasant those flavors are and as well those who source it.
