Maine Lobster Roll & Haute Caviar

Maine-style lobster rolls with the added extravagance of Haute Caviar! Home cooking live lobsters produces deliciously succulent meat which is absolutely unbeatable. The natural sweetness and juiciness of the lobster is paired lightly with mayonnaise to bind, celery and dill pickles for texture and lemon for freshness. The whole dish is served up to gleeful friends and family as a real treat, especially with the addition of Haute Caviar Company paddlefish roe which holds a delicate briny and buttery taste that melts on the tongue. Serve the caviar lobster roll classically with a side of Old Bay potato chips or unsalted potato chips or a light salad.

Ingredients:

● 2 lb live lobster

● 2 tbsp mayonnaise

● 1 lemon, zested and juiced

● 2 stalk celery, finely chopped

● 2 dill pickles, finely chopped

● chopped

● 1 tsp Old Bay Seasoning

● 4 brioche rolls

● salt, to taste

● black pepper, to taste

● 1 oz Paddlefish Roe from Haute Caviar Company

Instructions:

  1. Fill a large saucepan with water and season generously with salt, place the saucepan on high heat and bring to a boil.

  2. Place the live lobsters directly into the saucepan of boiling water and cook for 8 minutes.

  3. While the lobsters are cooking, fill a large bowl with iced water then transfer the cooked lobsters to the iced water and allow to cool for 10 minutes.

  4. Once chilled, place the lobster on a chopping board and use a heavy knife to cut through the centre of the tail.

  5. Remove the lobster tail meat, use the heel of the knife to crack open the claws and joints to extract all the meat.

  6. Roughly chop the lobster meat into bite-sized pieces then add to a mixing bowl.

  7. In the mixing bowl add the mayonnaise, lemon zest, lemon juice, celery, pickles, dill, Old Bay seasoning, salt and black pepper, stir the ingredients to combine evenly.

  8. Slice the brioche rolls in half and fill with the lobster mixture.

  9. Top the lobster rolls with paddlefish caviar and serve.
